Shortcut dinner: Costco sells Maple Leaf Farms fully cooked roast duck halves. With a quick glaze, you can have a great dinner on the table in about 25 minutes. (Can also be purchased at regular grocers.)
Ingredients
- 2 halves fully cooked roast duck (Maple Leaf Farms or similar)
- ½ cup fig preserves, marmalade, or other fruit preserves
- 2½ Tbsp coconut aminos
Instructions
1. Preheat oven
Set oven to 375°F.
2. Make the glaze
In a small bowl, stir together the preserves and coconut aminos until smooth.
3. Prep the pan
Line a baking sheet or pan with foil for easy cleanup.
4. Glaze the duck
Place the duck skin-side up on the pan. Brush generously with the glaze.
(Since the duck is already fully cooked, you can baste again later if you want more glaze.)
5. Bake
Bake for about 15-20 minutes, until heated through and slightly caramelized.

Garlic Spinach
- Heat olive oil in a pan
- Add sliced garlic and sauté briefly
- Toss in fresh spinach and cook until just wilted
Rice
- Serve with a 90-second wild rice or chicken-flavored rice packet for a quick starch.
