Rich, bistro-style braised short ribs — completely dairy-free.

A rich, cozy braised short rib dinner that feels straight out of a French bistro — no dairy required.

Sometimes you just want something slow-cooked and comforting. Short ribs are perfect for that kind of night when the kitchen smells amazing and dinner feels a little special.

This version leans on a red wine reduction, aromatics, and tomato paste to build deep flavor without needing butter or cream. As the ribs braise, the sauce slowly becomes rich and glossy all on its own.

The result is fork-tender meat with a savory sauce that feels restaurant-worthy but still works in a home kitchen.


Ingredients

Wine Reduction

  • 2 cups dry red Zinfandel
  • 1 crushed garlic clove
  • 1 small sprig thyme

Braise (Main Pot)

  • 3 lbs bone-in short ribs
  • 1½–2 tsp kosher salt
  • Black pepper
  • 1–2 tbsp olive oil
  • 1 medium onion, diced
  • 1 celery stalk, diced
  • 2 garlic cloves, smashed
  • 1½ tbsp tomato paste
  • 1¼–1½ cups beef broth
  • 1 sprig thyme
  • 1 bay leaf

Finishing

  • 1 tsp Worcestershire sauce
  • ½ tsp Dijon mustard (optional)
  • Up to ½ tsp balsamic vinegar (if needed)
  • Small drizzle olive oil

Instructions

1. Prep the ribs Preheat oven to 325°F. Pat the short ribs dry and season generously with salt and pepper. Let them rest for 15–20 minutes while you prepare the wine.

2.Reduce the wine In a small saucepan, simmer the red wine with the crushed garlic clove and thyme for 10–15 minutes, until reduced by about half. Strain and set aside.

3. Sear the ribs Heat olive oil in a heavy Dutch oven over medium-high heat. Sear the ribs in batches for 3–4 minutes per side until deeply browned. Remove and set aside.

4. Build the base In the same pot, cook the onion and celery for 5–7 minutes until softened. Add smashed garlic and tomato paste and cook for 1–2 minutes to deepen the flavor.

5. Start the braise Pour in the reduced wine and beef broth. Add thyme and bay leaf. Return the ribs to the pot so the liquid comes about ¾ of the way up the meat.

6. Braise Cover and place in the oven. Cook for 2½–3 hours until the ribs are fork-tender.

7. Finish the sauce Remove ribs and strain the sauce. Simmer for 10–15 minutes until glossy and slightly thickened. Stir in Worcestershire, Dijon (if using), a splash of balsamic if needed, and a small drizzle of olive oil.

8. Plate it up Serve the ribs with the finished sauce spooned over the top.

  • Serve over mashed potatoes or creamy polenta.
  • Pair with roasted carrots or sautéed greens.
  • Add crusty bread to soak up the sauce.
